Easy Roasted Potatoes


EASY ROASTED POTATOES – Alice Waters Chez Panisse

Any hard potato will do. Fingerlings are really nice for this dish.

Use as many potatoes as you need – small one’s are best
Two or three whole heads of garlic as per your taste. Peeled or unpeeled.
Enough olive oil to cover the potatoes when they are tossed, a tablespoon or two should work.
Sprigs of parsley or winter savory.
Water
Salt and pepper

Preheat your oven to 400F.
If the potatoes are big, cut them into bite sized pieces. Place them in a shallow baking dish.
In the dish toss them with the olive oil, garlic and thyme.
Cover with foil. Roast for about 40 minutes. Check to see if they are done. If not, continue to cook.
Serve warm.

Note: The potatoes can be put in a foil pouch and cooked on a grill or even in your fireplace.
