News from Farm:

As you can see from the picture above, Sam is still digging dahlias (with some help from Alex and I). The weather has been gorgeous for being outside doing slow meditative work and the soil moisture has been perfect for digging the tubers. When it is too wet, the soil clings to the bulbs making them extra heavy and unmanageable. When it is too dry, the soil is impossible to get off, again making them heavy and unmanageable. This week, it's been just right, the soil pretty much falling away from the roots as we lift them out. No wonder Sam is smiling!

PLEASE NOTE: This is our last week to deliver to Cecilia's until next spring. We will still be taking online orders for pick up at the North Asheville Tailgate Market and at the farm through December 18th. Starting in December the NATM market hours are 10am until 1pm.

Also: There will no deliveries on Saturday November 27th. We are taking next week off to celebrate Thanksgiving with our families and will likely still be digesting our Thanksgiving meal on Saturday morning.

CSA credit: CSA credit rolls over until the next season. The discount code is good for one season only.

What's available this week??

John has provided us with a great potato salad recipe and we have lots of potatoes that would be good for that recipe and for all your mashed, roasted and fried potato needs. We have onions galore. (see photo below) These onions are the most beautiful onions we have ever grown. Their skins literally glow and their insides are firm and juicy. We have lovely cabbages, tender greens, kale, chard and collards. Head lettuce and lettuce mix. Mini butternuts that would be prefect to slice in half, bake and serve whole with just a dollop of butter and a sprinkle of salt. We also have large butternut, sunshine kabochas, tetsukabitos and angel hair spaghetti squash. We have some cilantro, parsley and spinach. Our ears of popcorn make great stocking stuffers and hostess gifts, not to mention fabulous popcorn.

Out here, we love potato salads. Here’s another one from Mollie Katzen that is pretty interesting. This is from the original “Moosewood Cookbook” published in 1977. You can still get it, and it’s full of great recipes from the Moosewood Restaurant. We’ve worn the covers off ours.

KRISTINA’S POTATO SALAD – 6 to 8 hearty servings

Start by boiling 6 medium potatoes in their skins until they are tender. Drain and cool.

Combine
Potatoes, skins and all, diced
2 chopped hard cooked-eggs
2 diced medium tomatoes or half a cup or so canned and drained. This is optional if fresh ones aren’t available
Chopped red or green pepper
2 minced scallions
1 chopped cucumber
Chopped, fresh parsley
½ cup toasted cashews
¼ cup of toasted sunflower and sesame seeds

You will note there is a lot of room to add or subtract ingredients, some due to seasonal availability, or some you just might not want to put it.

Optional
Carrots – grated
Chopped celery
Radishes – think about those daikons that are available
Different nuts
Other raw vegetables you like

Put in about a cup of mayonnaise
½ tsb. Salt
Fresh black pepper
½ cup cider vinegar
1 tsp. horseradish
½ tsp. each dry mustard and tarragon

Serve with olives, spinach and lemon wedges
