News from Farm:

As of this writing, we still haven't gotten our killing frost! It is supposed to come tonight and there is snow falling in parts of WNC right now so..... Whenever it comes, we are ready. We spent yesterday covering all the kale beds, all the lettuce beds and our remaining beds of beets. We converted the flower cooler into a winter squash warm-room and moved all the winter squash into there. Winter squash needs to be stored at around 50 degrees so it gets special treatment. Then we moved all the potatoes and onions into the old winter squash room, where they are just protected enough to keep from freezing. The moving of the onions from the barn loft was particularly exciting because we figured out that we could use the fork lift on our newish tractor. There was a smile of pure delight on Alex's face as he raised and lowered those pallets of onions.

You may have heard about the terrible arson that happened in the Sandy Mush area yesterday. Thankfully, we were unaffected but several of our neighbors were not. Here is post from our neighborhood message board with a link to a "go fund me" for one of the families affected.

Please Help Our Friend Jeremy Justice aka Sqeaky and family. You all heard all about it. A serial arsonist has attacked several people in Sandy Mush and greater Leicester area burning down their Barns and stealing their livelihood. I personally know Jeremy he is the sweetest guy and he and his family have been destroyed by the attack on his property. He did not just lose his beautiful barn he lost an amazing tractor and other farm equipment and countless huge prime bales of Hay which he needs to sustain his livestock through the winter. “The first time you see something that you have never seen before, you almost always know right away if you should eat it or run away from it.” Scott Adams

FALL APPLES AND CABBAGE – Here is a recipe from Peggy’s collection we have here on top of our hill. Serves 4 or so.

This could be a fun, child friendly recipe and one for teaching simple knife skills.

2 large apples, cored and sliced
5-6 cups of cabbage, cut thinly
¼ cup brown sugar
¼ cup apple cider vinegar
¼ tsp. celery salt
¼ tsp. allspice
1/3 cup water

In a big sauce pan or a skillet, over medium heat, cook the apples until they are tender.
Add brown sugar and vinegar and stir in well.
Add sliced cabbage, celery seed and the allspice.
Add the water and cook until the cabbage is nice and tender and then season with salt and pepper.
