News from Farm:

We had some major water works this week on the farm. No water had been flowing into our irrigation pond for the past few months, which is fine when it rains but with our last dry spell, the water level was dropping A LOT every time we irrigated. Our best attempts to figure out why ended no where. Time to call in our neighbor with the grading business. He dug around with his machine for a bit and come to find out the 4" intake pipe was completely, 100% full of willow tree roots! After moving our catchment area another 40 feet away from the willow and adding two more intake pipes, I am very relieved to report that we have never had better flow into the pond and it is full and over flowing once again. (Picture above.)

We hope all the fish, bull frogs, crayfish, toadlets and our plants will be extra happy with all this good water.

Below: Tomatoes turn almost white right before they color up. Looks like we're going to have a good early crop.

What's available this week??

We have hit the time of abundance for squash and cucumbers, so you can start bringing out your favorite squash casserole and cucumber salad recipes. John has a new one for your to try in his recipe section. He also gives some ideas of what to do with our sweet earthy beets with tops. We have red and yellow onions this week. More new red potatoes, with yellow ones coming next week. For head lettuce we have green oak leaf, crunchy romaine, red butter and red leaf. Bags and bags of lettuce mix. Basil, cilantro and parsley are listed and are a treat to use fresh and abundantly after the winter. Rainbow Swiss chard. Mixed flowers bouquets and the last of the 2021 peonies.

Speaking of next week, we have our first few blushing tomatoes so more should be on their way for next week's market days as well as green beans and carrots!

John's Recipe of the Week

We are reading and using cookbooks by Nathalie Dupree. She is a keeper of great Southern recipes and has written several cookbooks, which are quite good. Check “New Southern Cooking” out if you can.

BEETS – Storing is easy. Dry them. Place in a container or bag, and they will keep in your refrigerator for a month. Do check in on them from time to time, watching for mold.
We like to cook a bunch of beets, and then use them later in salads or warmed up to go with a meal.

ROBERTA’S CUCUMBER SIDE DISH – From Roberta Salma, a dish tipping its hat to Arabic roots. Serves 4 to 6.

3 cucumbers, 2 peeled, 1 unpeeled, both diced
1 ½ cups plain yogurt
½ cup finely chopped fresh mint
1 tablespoon lemon juice
Salt
Black pepper

Mix everything together in a bowl and season with salt and pepper. This will keep for 2 days.
